I. Background of the Destination 1.1 General Information - Name of City/Municipality, Location

City: Cebu City Municipality: Bantayan Location: Bantayan Island is an island located in the Visayan Sea, Philippines. It is situated to the west of the northern end of Cebu island, across the Tañon Strait. Bantayan Island in Cebu got its name from the term Bantayan sa Hari, which means "Watchtowers of the King." Eighteen watchtowers were built here during the time of the 22nd Governor-General Sebastian Hurtado de Corcuera when Moro pirates raided the island looking for slaves. Bantayan Island, located at the northernmost tip of Cebu, boasts stunning beaches and eco-tourism sites where you can do sightseeing, swimming, cliff diving, island-hopping, kayaking, and even skydiving. Folklore says that the people would shout the word "Bantayan!", which means to "keep watching," eventually inspiring the island’s name.

  • The local police department coordinates with establishments to harden the preventive security measures around the island.

FOOD SAFETY PROCEDURES

1. Conduct a hazard analysis – The first food safety procedure is to conduct a hazard analysis. This involves evaluating and identifying all the potential hazards that may arise during the food preparation. 2. Determine critical control points – This is the point in time in which it must apply control in order to eliminate possible food safety hazards. This is to identify where hazardous contamination could occur 3. Establish critical limits – It is important to establish minimum or maximum limits that must be met to remove or reduce the hazard to a safe level. Establishing critical limits at every CCP gives the staff strict, easy-to-follow guidelines to help them understand how to keep food safe. 4. Establish monitoring procedures – The concerned establishments need to provide employees with a way to check that each limit has been met. Putting monitoring procedures in place is the most effective way to identify where, when, and with whom something may have gone wrong.

4.2 Protection of the Natural Environment

  • Philippine authorities are preparing to lift the protected wilderness area status of the Bantayan island group.
  • Imposed in 1981 to limit the construction of buildings and infrastructure on the main island of Bantayan and 22 nearby islets.
  • Residents are prohibited from owning titles to the land.
  • A long-running campaign by residents and business owners to have the protected status lifted to allow for development has culminated with authorities agreeing to open up the coastal areas for new development while retaining a core protected area inland of 540 hectares (1,334 acres).
  • The area under protection should be expanded to safeguard the island group’s sole source of fresh water from contamination, saltwater intrusion, and blockage.

  • Measure your waste
  • Reduce
  • Reuse
  • Recycle
  • Collection services
  • Separating waste

4.5 Important Issues, Challenges and Opportunities

LONG TERM• The increasing pressure for development in Bantayan Island led to the study of the water resources status. Two parameters were considered vital in the study, these are the quantity of useful groundwater reserve and the water quality. • While the COVID-19 pandemic has stalled congressional deliberations on the lifting of Bantayan’s protection status, Ango has organized a campaign to educate residents and to prompt the DENR to include the water table under its protection mantle. He says 540 hectares isn’t enough to preserve Bantayan’s water supply in the long term. • Threat of contamination SHORT TERM • Development of water resources for domestic and agro-industrial consumption requires judicious land use planning and regulation of groundwater extraction. • Demand for the precious resource in this expanse of clear blue marine waters has surged with the COVID-19 pandemic.

4.5 Important Issues, Challenges and Opportunities

OPPORTUNITIES • Philippine authorities are preparing to lift the protected wilderness area status of the Bantayan island group in the central Philippines. • The status, imposed in 1981, limits the construction of buildings and infrastructure on the main island of Bantayan and 22 nearby islets, and prohibits residents from owning titles to the land. • A long-running campaign by residents and business owners to have the protected status lifted to allow for development has culminated with authorities agreeing to open up the coastal areas for new development while retaining a core protected area inland of 540 hectares (1,334 acres). • Residents can’t own the land or receive titles for it, Meñoria says. • Safeguard the island group’s sole source of fresh water — the rain-fed aquifer on Bantayan — from contamination, saltwater intrusion, and blockage.

4.6 Sustainable practices

  • The School of the SEA’s rooftop (a small community in Sta. Fe)
  • Seaweeds farming budget.
