The sponge cake :

The sponge cake arrived in England and France by Italians Cooks who were engaged.

Originally the sponge cake was more a biscuit than a cake.

History of the cake

Victoria sponge cake :

The name of the cake refers to queen Victoria.

Anna the duchess of Bedford, found that she was hungry during afternoon tea, so she decided to add a cake or sandwiches to go with the tea.

Alfred Bird, developed the baking powder, it's this invention who gives this fluffiness to the cake.

Anna Russell

Anna Russell was the friend of the Queen Victoria but also her lady’s maid.

She created the afternoon tea, she found that the hunger was felt because the dinner was eaten late.

Queen Victoria

Queen Victoria :

Daughter of Victoire of Saxe-Coburg -saalfeld and Edouard-Auguste.

When she was a child Victoria wasn’t allowed to binge on sweets but when she became a queen she could eat sweets to her heart's content.

Victoria liked the idea of Anna to have a little meal between breakfast and dinner.

Afternoon Tea

Afternoon tea :

In 1840, the Duchess Anne of Bedford introduced the afternoon tea in England.

That's the Queen who officially established the tea time in Buckingham.

In the countryside, people were taking tea when they were coming back from the fields.
