Sidra (or cider) is the traditional drink of Asturias. It is made from locally-grown apples and has been produced since ancient times. The Romans called it “pomaria” and the Arabs called it “siserio.” It has a low alcohol content (4 to 6%) and is popular all over Spain. Cider is traditionally sold in establishments called sidrerias, where the bartender serves the cider by holding a large, rustic glass in one hand and a bottle of cider in the other. He raises the bottle above his head and lets the chilled cider fall into the glass, producing a bit of foam from the carbonation. This pouring method is called escanciar and it is said to be necessary in order to produce the best flavour from the sidra. In addition, the large, wide-mouthed glass is never filled, but only a few centimetres of sidra is poured into the glass. Tradition says it must be drunk immediately and should not be allowed to stand.

Sidra ist das Nationalgetränk Asturiens. Es wird aus Apfelsorten hergestellt, die in Asturien wachsen und geerntet werden. Seit jeher wird der Sidra hier gekeltert, die Römer nannten ihn „pomaria” und die Araber „siseria”. Der Apfelwein hat einen geringen Alkoholgehalt (zwischen 4 und 6 Vol.-%) und ist in ganz Spanien beliebt.Der „Sidra” wird in urigen Apfelweinkneipen, „sidrería” genannt, von speziell geschulten Einschenkern ausgegeben. Für das Einschenkritual wird in einer Hand das Apfelweinglas so weit wie möglich unten gehalten und in der anderen Hand ist die Flasche. Der Einschenker hebt den Arm mit der Flasche so hoch wie möglich und schüttet mit einer eleganten Drehung den Apfelwein aus gröβtmöglicher Höhe ein, dabei schäumt er ein durch die Anreicherung mit Sauerstoff ein bisschen.Diese Art den Apfelwein einzuschenken, nennt man „escanciar“ und wird gemacht, weil man so den besten Geschmack erreicht. In das hohe Apfelweinglas mit der groβen Öffnung werden nur ein paar Zentimeter eingegossen und die Tradition besagt, dass der Schluck Apfelwein sofort getrunken werden muss und nicht abstehen darf.

Le cidre (ou cidre) est la boisson traditionnelle des Asturies. Elle est élaborée à base de pommes cultivées localement et produite depuis l’Antiquité. Les Romains l’appelèrent « pomaria » et les Arabes « siserio ».Il a une faible teneur en alcool (de 4 à 6%) et il est très connu dans toute l’Espagne.Le cidre se vend traditionnellement dans des établissements appelés « cidreries », là le serveur sert le cidre en soutenant un grand verre rustique dans une main et une bouteille de cidre dans l’autre. Il lève la bouteille au-dessus de la tête et verse le cidre frais dans le verre, produisant ainsi un peu d’écume à cause de la carbonation. Cette façon de servir le cidre s’appelle « escanciar » et on dit qu’elle est nécessaire pour donner la meilleure saveur au cidre.De plus, le grand verre à large bouche ne se remplit jamais, on sert uniquement un peu plus de cent millilitres de cidre. La tradition veut qu’on le boive d’une gorgée sans le laisser reposer.

Fabada Asturiana
Fabada asturiana or simply fabada, is originally from the northern Spanish region of Asturias. However, it has spread all over Spain and is recognized as one of the most important dishes of the Spanish cuisine par excellence. Fabada asturiana is made with fabes (white beans in Asturian), several types of sausages and pork, as well as spices such as saffron. There are records of fabes, or white beans in Asturias that go back to the 16th century, though its consumption is perhaps earlier than that. Like many other examples of Spanish food, fabada asturiana has rather humble origins as it was the poorer people of Spain who would mix fabes with any meat leftovers that they had.

Asturianischer Bohneneintopf „Fabada“
Die asturianische „Fabada“ oder einfach nur „Fabada“ kommt ursprünglich aus der im Norden Spaniens liegenden Region Asturien. Allerdings hat sie sich in ganz Spanien verbreitet und ist als eins der traditionellen spanischen Essen allgemein anerkannt. Die Zutaten des Bohneneintopfs sind weiβe Bohnen, „fabes“, verschiedene Stücke Würstchen und Schweinefleisch, sowie Gewürze, darunter auch Safran. Es gibt Berichte über die Fabada, die bis ins 16. Jahrhundert zurückgehen, obwohl der Bohneneintopf wahrscheinlich schon früher gegessen wurde. Der Ursprung des Bohneneintopfs ist ein Armeleuteessen, die so Fleischreste verwertet haben.

La « fabada » asturienne ou tout simplement la « fabada » est un plat originaire des Asturies, région au nord de l’Espagne. Cependant, ce symbole de la gastronomie asturienne s’est étendu dans le reste du pays et il est reconnu comme un des plats les plus importants de la cuisine espagnole.La « fabada » asturienne s’élabore avec des « fabes » (haricots blancs en asturien), différents types de charcuteries et d’autres produits issus du porc, en plus d’espèces comme le safran.On trouve des registres de « fabes » ou haricots blancs en Asturies remontant au XVI siècle, bien que sa consommation soit peut être antérieure.Comme beaucoup d’autres plats de la gastronomie espagnole, la « fabada » asturienne a des origines assez humbles, car ces les personnes les plus pauvres d’Espagne qui mélangeaient les « fabes » avec les restes de viandes qu’ils avaient.

Bollinos preñaos
Un des mets les plus populaires de tous les temps c’est le pain farci au chorizo « bollo preñao » ou « bollu preñaú » en asturien.C’est un « choricillo » (petit chorizo) à l’intérieur d’un petit pain. Généralement les « bollos » se vendent dans toutes les boulangeries surtout en été car il fait partie de nos festivités.Ils sont cuisinés au vin ou au cidre et à vrai dire leur simplicité ne fait pas justice à leur excellent gout. .

One of the most popular meals of all time is the bollo preñao (bollu preñáu). It is a “choricillo” (small chorizo) inside a bread roll. Usually, the bollus are seen around all the bakeries and more in summer time since it is part of our festivities. They are usually with a wine or sidra and the truth is that its simplicity does not do justice to how good it is.

Würstchen im Schlafrock „Bollinos preñaos“
Eins der beliebtesten Essen aller Zeiten ist der „bollino preñao“ (bollu preñáu im asturischen Dialekt). Er besteht aus einer kleinen Paprikawurst „chorizo“, die von Brot umhüllt ist. Normalerweise kann man die „bollos“ jederzeit in allen Bäckereien kaufen, aber mehr noch im Sommer, da er fester Bestandteil der Festlichkeiten ist. Zu dem „bollino preñao“ trinkt man ein Glas Wein oder Apfelwein, „sidra“ genannt. Um ehrlich zu sein, ist der „bollino preñao“ trotz seiner Einfachheit unglaublich lecker.
