The Legend of the PIZZA

and what it means for us

It was 1889:

the King and the Queen of Savoy stayed in the royal palace of Capodimonte in Naples. The Queen had heard some artists to talk about the “pizza”. She had never tasted this delicacy

Pleased to meet you all!I am the Queen of Savoy. I am staying here in Naples for the holidays! She was curious to taste the pizza! She wanted to eat a slice of this praised food.

THE CHEF

Raffaele Esposito, the owner of a famous pizza restaurant, was called to the royal palace of Capodimonte. This pizza restaurant still exists and it is called “Brandi". Raffaele Esposito went to Capodimonte with his wife Rosa, the real expert about pizza.

WHAT IS NEEDED TO

A good bread oven, well heated, oak and beech wood ...

Pure spring water atroom temperature

A bunch of natural salt...

YEAST

The mother yeast is an ancient recipe; it is made exclusively using natural sour dough, commonly known as “Mother Yeast”, a fermented dough made of water and wheat flour.

TOMATOES

Red mature tomatoes

OLIVE OIL

Olive oil as required

MOZZARELLA

Some slices of the italian cheese

BASIL

Green flavoured basil

Raffaele Esposito prepared three different kind of pizza, but only one was the Queen's favourite one: tomatoes, mozzarella and basil. This pizza had the same colors of italian flag: red, white and green. The Queen asked what was the name of this tasty pizza. Raffaele answered: Margherita dedicating it to the Queen. Since then every time that Queen Margherita came to Naples, Raffaele Esposito and his wife prepared for her the beloved pizza!

It is nice to know that we still eat Pizza Margherita today!

...and it tastes amazing!
