Our itinerary begins with the Monastery of San Nicolò l’Arena, a well-known example of late Sicilian Baroque in Catania. This is situated in the center of Catania and it’s constituted by an important Benedictine monastic building and by an eighteenth-century church.

Founded by the Cassinesi monks in the 16th century and subsequently modified in the following years (17th century) after a destructive earthquake and the eruption of Etna, this monastery come inserted in 2002 in the list of the UNESCO World Heritage Site as a ‘’jewel of the late Sicilian Baroque’’.

Of the 16th century monastery remain standing the whole basement and part of the first floor. What makes this building special are the many types of architectural styles used from ancient times onwards. The external facade is dark and a little rough, because it’s incomplete, and therefore in contrast with the light and elegant interiors.

Enlarged, decorated and remodeled, the monastery becomes one of the convents largest in Europe and it’s the tourist attraction more relevant than Catania together the Duomo, the Massimo Bellini theatre and the Ursino Castle.

Over the visit of the San Nicolò l’Arena church, we continue the tour inside of the DISUM - Department of Humanities Sciences of the University of Catania - which is headquarter inside of the monastery of San Nicolò l’Arena.

In there we find also the ‘’Mario Rapisardi’’ library-museum, the historical library and newspaper library 17th-century and the large refectory designed by the great architec Giovan Battista Vaccarini and made complete disposition at the students of this University.

The method is: - Blend with an minipimer the pistachio and add gradually the extra virgin olive oil, the mint, the salt and the pepper. - In the same time put on cooking the water for the pasta inside off a pot. - As soon as comes to a boil, add the spaghetti. - In the same time put on cooking a pan with inside off the extra virgin olive oil, 1 garlic cloves and the anchovy fillets cut into small pieces until the anchovies have melted. - Once the pasta is drained, add it to the pan and pour the pesto together with a little cooking water and mix everything. - Leave to cook for a couple of minutes and continue to mix well. -Serve the dish.
