Hatikvah
Naftali Herz Imber wrote the poem "Tikvateinu" in 1877, and it was published in his book Barkai in 1886. Shmuel Cohen composed the music for the anthem in 1888, based on the melody of a European folk song. The lengthy poem (of nine stanzas) was abridged and first sung at the 3rd Zionist Congress in 1903. It was officially accepted as the Zionist movement's anthem at the 18th Zionist Congress in 1933 and it was performed when Israel declared independence in 1948. Despite this, Hatikvah was not officially designated as Israel’s national anthem until 2004 when the Knesset expanded the original Flag and Emblem Law of 1949 to be the Flag, Emblem and National Anthem Law.

Jordan River
The Jordan River rises on the slopes of Mount Hermon, on the border between Syria and Lebanon, and flows southward through northern Israel to the Sea of Galilee. Exiting the sea, it continues south, dividing Israel and the Israeli-occupied West Bank to the west from Jordan to the east before emptying into the Dead Sea. The river was called the Aulon by the Greeks and is sometimes called Al-Sharīʿah (“Watering Place”) by the Arabs. Christians, Jews, and Muslims alike revere the Jordan. It was in its waters that Jesus was baptized by St. John the Baptist. Israel uses up to 11.3 billion cubic feet of the Jordan’s waters annually. The diversion of river water by both Israel and Jordan has significantly diminished the Jordan’s flow into the Dead Sea and has been a major factor in the considerable drop in the sea’s water level since the 1960s.

David Ben-Gurion was the first Prime Minister of the State of Israel and its leading political voice for the country’s first decade. In 1930, he formed Mapai, the Zionist Labor Party, and in 1935 he became chairman of the Executive Committee of the Jewish Agency for Palestine. Ben-Gurion declared the State of Israel on May 14, 1948 (shown in the photo). As leader of the new country, he oversaw the development of institutions and established Jerusalem as the capital.He emphasized the development of the Negev as a key to Israel’s growth. The video shows him working on kibbutz Sde Boker in the Negev where he retired from politics.

Falafel has been a staple food of the Middle Easterrn diet for many years. Chickpeas, the main ingredient in falafel, were so common throughout the region of what today is Israel, Lebanon, Syria, Jordan (called the Levant) and some regions of Turkey and Iraq that their farming and use became incredibly widespread among the local populations. As far as back as 11,000 years ago, chickpeas were grown and used widely because of their nutritional value. Once picked, chickpeas can be dried and stored for long periods of time. Chickpeas are used in a wide variety of Middle Eastern cooking and food, including the incredibly popular hummus and felafel. In fact, when the felafel dish made its way into this region from Egypt, where it was originally made from fava beans, chickpeas replaced the fava beans to give us the falafel balls we most commonly see today.
