Roll out the pastry and cut circles. Put the circles in your tins. Fill them with mince meat. Cut stars or flowers in the pastry. Put them on your pies. Bake in the pre-heated oven (200°C) for about 20mins.When cooled, sprinkle some icing sugar on the pies.

Pastry: 350g flour 225g butter 1pinch salt 1 beaten eggcold water Mix the flour, butter and salt.Add the egg and one teaspoon of water at a timeto form a ball (not sticky)

Ingredients: Mince meat: 175g raisins (raisins secs)110g currants (raisins de Corinthe)110g candied mixed peel (orange/citron confits)225g brown sugar1/2 teaspoon nutmeg (noix de muscade)2 teaspoons mixed spice (épices à pain d'épices) 1 lemon (grated zest and juice)1 orange (grated zest and juice)1 finely chopped apple (coupée très finement)(4 tablespoon brandy (cognac ou autre)) Mix all the ingredients (except the brandy) in a large bowl, stir evenly, cover with a foil and leave overnight. Cook in a pan for 10min and add the brandy.
