Pineapple and gelatin experiment analysis

In this video we will see the effects of pineapple on gelatin

For this experiment we will need...

Powdered gelatin

10 plastic cups

Cooking pot

3 pineapple slices each one 1cm wide

PROCEDURE

First we cut up 3 slices of pineapple, each slide should be 1cm wide.

Then we pop in the freezer 1 slice and leave the 2 slices left as room temperature overnight.

On the next day we grab 10 cups, we label 3 with the letter C which means cold, 3 with the letter H which means hot, 3 with the letter R which means room temperature and lastly 1 cup with the word control.

Proceed to prepare the gelatin.

Then take out a cooking pot and fill it with one cup of hot water, place on top of the stove and heat at medium temperature to boil a slice of room temperature pineapple for 5 minutes.

Hot

Then we cut up all 3 slices the cold, the hot and the room temperature into 6 pieces and we put a piece in each corresponding cup, except for the one that says control.

Room Temperature

Then fill each cup with gelatin until 3cm.

Lastly pop all the cups in the fridge until the gelatin becomes solid.

RESULTS

Room Temperature results

As the results the cups containing room temperature pineapple didn't let the gelatin solidify because pineapple has an enzyme called bromelain which breaks down the molecules of gelatin, preventing the gelatin to get solid.

frozen Results

As the results of the cups containing the frozen pineapple the gelatin didn't solidify because as the same thing as in the room temperature results the pineapple contains this enzyme called bromaline which doesn't let gelatin solidify. Changing the pineapple's temperature wont affect, the gelatin still wont solidify.

Hot Results

As the results of the cup containing the hot pineapple the gelatin did solidify because we applied heat to the pineapple and that denatured the enzyme, which helps the gelatin solidify.

Control results

As the result of the control it did solidify since we didn't add pineapple to it.

analysis

As the results, the only cups in which the gelatin jelled were the control because there was no pineapple in it and the hot one because we boiled fresh pineapple to denature its enzyme so it would let the gelatin jell. The ones that did not jelled were the room temperature because the pineapple breaks down the gelatin molecules and the cold because its temperature does not affect the gelatin, therefore it shouldn’t solidify but stay liquid, this results demonstrate that the pineapple enzyme works fine, unless we apply heat on it.

Conclusion

We can conclude with this experiment that the results of the freshly cooked pineapple were different comparing them with those of the results of fresh and cold pineapple because the pineapple enzyme breaks down the gelatin molecules causing the gelatin not to solidify. If we boil a pineapple, we are denaturing its enzyme, we are damaging it, causing it not to work and that’s the reason of why the results were different and why in the hot results the gelatin did jelled.
