Harvesting, Crushing and Milling: cane is cut from the fields, cleaned, cut with knives(shredded), crushed and hot water is added/sprayed to dissolve the sucrose from the cells. Dilute cane juice and fibres are produced. Click here,

2.Precipitation/Clarification: Calcium hydrdoxide,Ca(OH)2 (also called lime) is added WITH HEAT to neutralize the acidic juice, precipitate out the sediment impurities and prevent the breakdown of the sucrose to glucose and fructose. Click here

3. Filtration: the non-sugar impurities precipitated out from step 2 are filtered out from the CLARIFIED JUICE. They are washed to extract any sucrose present and returned to the fields to be used as fertilizer. Click here.

4. Vacuum Distillation/Evaporation: The clarified juice which is about 85% water is concentrated by boiling in a series of evaporators under reduced pressure. This method prevents the juice from charring or becoming caramelized. Click here.

5. Crystallisation: The thick syrup is boiled again at low pressure in vacuum pans to remove more water. A mixture of sugar crystals and molasses are formed, collectively called MASSECUITE. Click here.

6. Centrifugation: High speed rotation separates sugar crystals from molasses. Unrefined sugar is sold locally or exported. Molasses is used to make rum and animal feed.
