1. Ajiaco with chicken
One of the main cravings of Colombians in the Andean area of the country (Bogotá and its surroundings) is ajiaco. This is a kind of soup and is usually served accompanied by various contours. It is one of the most representative dishes and it is basically made of Colombian yellow potatoes, corn on the cob, chicken and arracacha. Its texture is usually very smooth and is quite thick, it is consumed at any time of the year and it is perfect to accompany the coldest days. It is also very common in any restaurant.
2. Tamales with ground
The ground tamales are widespread throughout the Colombian territory and of course they are a very present dish on the tables that serve typical Colombian food. They are often a family favorite for Sunday breakfasts and gatherings. Basically, they are prepared with corn in their main dough and filled with lots of meat and vegetables. They are prepared cooked (often with firewood) and wrapped in banana leaves. Its preparation is usually somewhat complex, which is why it is very common to find street vendors with different types of tamales and grinds on all the streets of towns and cities. Many accompany them with dressings, or sauces, to vary the flavors.
3. Tripe - Mondongo
Tripe is a kind of soup, but much more complex and sometimes served alone, since it can be a very heavy dish for many. It is prepared based on animal tripe and is accompanied with Colombian potatoes and a large amount of vegetables. Something characteristic of tripe is that it is prepared in different ways by Colombian families. Some add corn, others different grains or vegetables, etc. However, the most basic versions are never lacking in any Colombian restaurant.
4. sancocho
It is one of the most common in the coastal region of the country, internationally recognized for its rich culture and gastronomy. It is a kind of soup prepared with different types of meats, vegetables of all kinds, condiments and some spices (Corn, banana, squash)
5. Tray paisa
Although for some it may seem an exaggeration, in a paisa tray you can find up to 10 parts in the same plate, since it is a fairly diverse and heavy meal. It is native to the Antioquia region and is known by many as the most representative dish of typical Colombian food worldwide, since it can never be missing in any restaurant. In general, in a paisa tray they can harmoniously coexist: fried pork rinds, red beans, white rice, fried slices of banana, fried eggs, onion, tomato, an arepa, avocado, chorizo, black pudding, patacones, ground meat and ribs. Due to the large number of elements, it is not served on a conventional plate, but on huge ones, or on special wooden trays for the plate, hence its name.
6. arepas
Arepas are a very famous dish in all parts of the world, and they are a legacy of pre-Columbian Venezuela. They are also quite typical in various parts of Colombia, although different variations can be found, especially in the type of corn, since sometimes it is more yellow and other times white. Easy to prepare pre-cooked flours are sold for its preparation and can be filled with a large number of ingredients, from meat, cheese and ham, to grains, sausages and avocado. They are perfect for breakfast and dinner and are accompanied by hot or cold drinks.
7. Stuffed ripe banana
Sweet cannot be absent from Colombian gastronomy either. Stuffed ripe plantains are common in the lunches of families in the center and north of the country, and are basically a complement to various types of food. They are baked ripe stuffed with cream cheese, arequipe, sandwiches and butter. The fillings could vary according to the region and the taste of each family, for example, many times they are prepared with only cheese and butter and the type of cheese used can be indistinct. To bake them, they are usually wrapped in aluminum foil and their preparation is quite simple.
